These have been my go to recipe forever. When I used to work in London, these were what I’d make for my boss if I needed to come in late one day, or if a project was being particularly hellish. They’re what I’d bake on a rainy weekend when everything seemed a little glum, or when it was someone’s birthday and I’d forgotten until the last minute. They’re what I still bake now when the world just needs a little more chocolate in it.

Which is probably why they’re exactly what Mac bakes for Lottie, on the worst day of her life.

They are also perfect for nicer occasions too, such as watching the final of the Great British Bake Off this evening!

Chocolate Brownies

Ingredients:

  • 175g butter
  • 175g dark chocolate
  • 3 eggs
  • 250g caster sugar
  • 1 1/2 tsp vanilla extract
  • 110g plain flour
  • 1/2 tsp salt
  • 100g white chocolate chips

Method:

Preheat the oven to 180°C / fan 160°C / gas mark 4

Melt the butter and dark chocolate together in a large, heavy based saucepan

In a bowl, beat together the eggs and sugar, and the vanilla extract

Once the chocolate mixture has cooled, beat in the egg and sugar mixture, then add the flour and salt

Stir in the white chocolate chips

When it’s all combined, pour the mixture into a lined brownie pan

Bake for about 25 minutes until the top looks dry. The inside should still be gooey and delicious!
