Baking through the Book: Pecan Loaf

If you’ve read Love, Lies and Lemon Pies, then you’ll know that Mac’s signature bake – his pecan and maple syrup loaf – is kind of an important plot point. If you haven’t, then all you need to know is that it’s yummy!

Mac’s Pecan & Maple Syrup Loaf

  • 300g plain flour
  • 150g soft brown sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 75g chopped pecan nuts
  • 250ml milk
  • 75ml maple syrup
  • 1/2 tsp vanilla extract
  • 2 eggs
  • 20g melted and cooled butter


Preheat the oven to 180°C / fan 160°C / gas mark 4

Mix together the flour, sugar, baking powder, salt and pecan nuts

In another bowl, whisk together the milk, maple syrup, vanilla extract, eggs and butter

Add the wet ingredients to the dry and stir to combine

Pour the mixture into a greased and lined loaf tin and bake for 45-50 minutes, or until a cake tester comes out clean
